Chana Masala

Chana masala is a delicious and flavorful Indian curry made by cooking chickpeas in a spicy onion tomato masala gravy.

You can eat it with some rice or with naan bread.

Ingredients

250 g canned chickpeas
50 ml coconut mil (full fat)
8 cloves garlic (crushed and roughly chopped)
2 tomatoes
2 spoons extra-virgin olive oil
2 spoons tomato paste
2 leaves bay leaves
30 g garam masala
1 red onion
1 teaspoon muscovado sugar (dark brown)
1 pinch table salt

Steps

–        chop the onion and the garlic cloves finely and put them into a pot;

–       add a pinch of salt, 2 full spoons of extra virgin olive oil and mix well;

–       as soon as the onion starts to fry, cover the pot with its lid and put the flame to minimum;

–       let the onion to stew in its own liquid;

–       remove the lid, add the ground spices and the bay leaves;

–       stir well;

–        add the tomato paste and stir well;

–       add the tomatoes chopped into small cubes and stir well;

–       let it cook for till the tomatoes soften, then pour the coconut milk and stir well;

–       add the drained chickpeas and cook for another 5 minutes;
