Jerusalem Artichoke Creamy Soup

This is one of the traditional winter soups in Malta. Its origin goes back to the times when the Knights of St. John were ruling the country. My recipe is inspired by that soup.

Jerusalem artichoke is a very nice and healthy root vegetable, with plenty of benefits for our health.

Do not allow the color of this soup to put you off. The texture and the taste are really really good.

Jerusalem artichokes are in full season during Christmas, thus this would make a delicious starter-soup for your Holidays dinners and lunches.

Ingredients

1 l vegetable broth
800 g Jerusalem artichoke
4 cloves garlic
2 sprigs rosemary
2 spoons extra-virgin olive oil
1 potato
1 onion
1 pinch table salt
1 leaf bay leaf

Steps

– slice the onion and the garlic cloves finely and put them in a pot with the salt, the rosemary needles and 2 spoons of extra virgin olive oil, mix well;
– put the pot on the fire and cook over medium heat;
– as soon as the onion starts to fry, cover the pot with its lid and put the minimum flame;
– meanwhile, wash well the Jerusalem artichokes, taking good care of removing any traces of soil. Cut them into thin slices. Do the same with the potato.
– let the onion to stew in their own liquid, then add the Jerusalem artichokes and the potato;
– pour the hot broth, add the bay leaf and cook on a medium fire for about 25 minutes then remove the bay leaf;
– remove the pot from the stove and reduce everything to a smooth cream by using a blender;

  1. Oh I love artichokes – they are delicious stew in a little water, olive oil, garlic and parsley and eaten hot or cold. But lately I have been cooking it for a soup. I assure you it’s a delicacy. I will try your recipe as well.
