Sicilian Red Pesto

This pesto is very easy and quick to make. You just need a few good quality ingredients, some nice pasta and you will make an amazing main course in just 15 minutes! You will bring a piece of sunny tasty Sicily on your table 🙂 I hope you will enjoy it!

Ingredients

  • 350 gfresh ricotta cheese
  • 130 gsun-dried tomatoes (I used sun-dried cherry tomatoes)
  • 30 gpinenuts
  • 20 gblanched almonds (I used Mandorla Pizzuta d’Avola)
  • 45 ggrated semi-hard Ragusano D.O.P. (or Parmesan cheese)
  • 5 spoonshot water
  • 1 bouquetfresh basil
  • 1 bouquetfresh marjoram
  • q.s.extra virgin olive oil

Preparation

  1. – sift the ricotta onto a large bowl;
    – drain the tomatoes from their oil and place them in a blender;
    – add the pine nuts, the almonds and the fresh herbs;
    – pour 5 tablespoons of water and 3 of extra virgin olive oil;
    – blend everything until you get a semi-liquid paste;
    – pour the mixture on the ricotta, add the grated cheese and mix everything well;
    – add extra virgin olive oil just enough to make the pesto moist and creamy;  

    Use it immediately on some nice pasta (this dose is for about 400gr pasta). If you wish to save it, then store it into a sterilized jar in the fridge for not more than 2 days.
